Filamentous fungi hold great potential to aid the green transition of our diets. They can utilize side streams and render them into delicious foods or they can be utilized as cell factories to produce food components. We want to get a better understanding of the relationship between fungal phenotypes and genotypes in regards to relevant features for future food production. Our current food production system is relying on animal and plant-derived proteins. Filamentous fungi may hold great potential to support the green transition of our diets. They can be utilized for the creation of delicious food products. Their features such as enzyme secretion, texture and flavour are critical for the development of sustainable foods. Join us in our endeavor to develop relationships between fungal traits important for the food production of tomorrow and their genome.
