Are you skilled within Brewing and do you want to become part of an ambitious global growth journey for one of the most recognized craft beer brands in the world?

We are looking for a Brewer to join the brewing operations at our Brewpub in the heart of London's Clerkenwell area. In 2025 we aim to produce over 1000HL of beer across a wide range of styles on a 7.5HL brewkit, and are constantly looking to innovate and improve. It’s a mentally and physically demanding role, regularly brewing new & returning recipes and working closely with the Lead Brewer to produce and package beers, predominantly into serving tanks & keykegs.

In the UK, Mikkeller partnered with Rick Astley in 2018 to open Mikkeller Bar London in Shoreditch, and the next year began working on Mikkeller Brewpub London on Exmouth Market, where we brew some of the best, freshest, and most local beer available in the country, in a unique, fun and inclusive environment.

Tasks & responsibilities

Production:
  1. Procurement of ingredients and consumables
  2. Manual work including regular lifting & carrying of items up to 32kg
  3. Operating the 7.5 hL brew house and cellar, including wort production, yeast handling, fermentation management, dry hopping, maturation/conditioning and packaging into serving tank and keykegs
  4. Performing CIP, brewery maintenance and site upkeep across the entire brewery, keeping a clean, organised and tidy working environment
  5. Testing and approving the quality of all beer brewed on site, in conjunction with the lead brewer, meeting consistently high product standards
  6. Working to minimise wastage and excess costs, without compromising on quality
  7. Development of new and existing recipes, under supervision of the lead brewer, plus research & development of the latest brewing processes
  8. Maintaining a high level of health and safety standards, adhering to our HACCP programme
Inventory Management:
  1. Using Breww software, manage a large stock of various ingredients, chemicals, brewing aids, and beer brewed on site, in a facility with limited storage
  2. Working with the lead brewer to ensure production planning is efficient to meet the dynamic needs of the Brewpub
Communication:
  1. Liaising effectively with the lead brewer and bar management team
  2. Developing a personal understanding of systems & processes, with effective time management
  3. Confidence working on multiple tasks at once and, at times, work alone
  4. Representing Mikkeller Brewpub London and Mikkeller more broadly, in a customer facing workplace and at various events and festivals

Experience required:

  1. Minimum 2 years’ experience in a commercial brewery
  2. A relevant qualification in brewing e.g. GCB, Level 4 Apprenticeship, IBD Diploma
  3. An understanding of quality assurance and control processes within a demanding working environment
  4. Must have the right to work in the UK
  5. The role is perfect for someone looking to work closely with an experienced lead brewer in a fun & creative fast-paced setting
