Job Summary

We are seeking a highly skilled and talented Chef de Partie to join our innovative kitchen team at Mercure Perth. As a key member of our culinary team, you will report directly to the Head Chef and work predominantly in our conferencing and events space.

Key Responsibilities

  1. Assist the Head Chef with menu preparation and ensure adequate supplies are available for expected service.
  2. Plan, prepare, and execute high-quality food offerings for various conferences and events.
  3. Supervise the kitchen in the absence of the Head/Sous Chef.
  4. Maintain excellent presentation standards and cost control for all food and beverage outlets, while maintaining recipe standards.
  5. Ensure strict stock rotation and minimum wastage.
  6. Keep all working areas clean and tidy, and ensure all equipment is maintained, serviced, and cleaned to WHS standards.

Requirements

  1. Previous experience in a similar role.
  2. Trade qualification.
  3. Experience in conferencing and events up to 100 pax.
  4. Excellent technical knowledge with experience in all cooking techniques and styles.
  5. Experience leading staff during service.
  6. Advanced communication skills.
  7. Understanding of food safety standards and HACCP.
  8. Experience in delivering conference and events.
