Postdoctoral Researcher in Food Innovation

We are seeking a highly motivated Postdoctoral Researcher to join our team at the University of Southern Denmark (SDU) Biotechnology Department. The successful candidate will be part of the FOOD MATTERS group working on sensory and consumer perception of fermented plant-based foods.
Role OverviewThe postdoctoral position focuses on the sensory quality and consumer acceptance of plant-based foods utilizing innovative fermentation techniques. You will be responsible for planning, executing, and reporting on the results of the sensory trials in the project.
You will work closely with project partners to build a comprehensive database on the same set of samples, collaborating on tasks related to physico-chemical characterization, nutritional quality, and gut health effects.
About the ProjectThis is a 36-month research fellowship starting February 2025 or as soon as possible thereafter. You will be part of a large European project, FlavourFerm, focused on unlocking the flavour potential of plant-based foods and responding to consumer demand for tasty, nutritious, and healthy products.
Your Responsibilities- Design and execute sensory experiments to evaluate the quality and acceptance of plant-based foods
- Analyze data using multivariate analysis techniques such as Sensometrics
- Collaborate with project partners to integrate results into a comprehensive database
- Present findings through scientific publishing and other forms of research dissemination
To be successful in this role, you should have:
- A PhD in food science, sensory science, psychophysics, human nutrition, or a related field
- Experience in one or more areas: sensory and consumer science, Sensometrics, Human Nutrition, Microbiology, and Bioinformatics
- Documented experience from projects related to the current position
- Previous experience with practical planning of sensory experiments and scientific publishing
