New opportunities within the Fresh Dairy space are emerging for Novonesis to develop our BioSolutions portfolio within the non-fermented milk food products fluid, evaporated, condensed and barista milk, ice cream, dessert.

We are looking for an experienced profile with a scientific and creative mindset to lead the development of enzyme-based biosolutions innovation pipeline to solve our customer needs.

You will become part of Applied R&D Fresh Dairy, Projects, Competences & Sensory Denmark, composed of 8 scientists and 6 technicians.

Our team is anchored within a larger Fresh Dairy Application organization composed of 6 teams of 60 employees in Denmark, France, USA, China, and Malaysia.

Located in Hoersholm, Denmark, our team has a global role and collaborates closely with Business Development, Marketing, R&D, local application teams, Sales, and our customers all over the world. The department in Denmark is composed of 25 highly skilled scientists and technicians, who are divided into two teams with different areas of responsibility – Projects and Technical Support – yet working closely together.

The Projects, Competences, and Sensory team you are joining plays a pivotal role in both short and long-term new product and competence development projects. The aim is to develop new solutions of microbial cultures and enzymes for our customers for a wide range of fresh dairy products (stirred yogurt, ambient, Greek/skyr, drinking, probiotics, fluid milk). We are using state-of-the-art production pilot plant and laboratory technologies, methodologies, and modern equipment to deliver on our ambition.

Your new team holds a strong expertise in fermentation, texture of food, and high-quality fermented/non-fermented milk production and evaluation. The team is multicultural and values good collaboration, open communication, and high quality. We work in a flexible way across many different projects to accommodate our customers' needs.

In this role you'll make an impact by:

  • Leading or contributing to projects developing enzyme-based solutions for non-fermented dairy products, from concept to launch.
  • Participating and managing strategic customer accounts with technical expertise in enzymatic solutions.
  • Creating a technical roadmap for fresh dairy enzymes, identifying new opportunities, experimental strategies, lab methods, production processes, and prototyping.
  • Expanding knowledge of enzymes for fresh dairy products through collaboration with experts, R&D, Sales, and Marketing.
  • Overseeing and/or carrying out application trials in labs and pilot/industrial validations in our application center and/or at customer sites.
  • Performing or coordinating analyses of enzymatic performance and finished product attributes like texture, flavor, and nutrients.
  • Staying updated on non-fermented dairy trends and processes, sharing insights internally.
  • Inspiring customers by showcasing innovative product concepts using Novonesis products, dairy ingredients, and advanced processes.

To succeed you must hold:

  • PhD or MSc degree in Food Science, Dairy Science, Biochemistry, or a related field.
  • 8+ years of experience in enzyme application and/or product development, preferentially within the non-fermented dairy industry and related manufacturing processes.
  • Deep understanding of dairy enzyme and milk protein functionality, milk and dairy chemistry, microbiology, and processing.
  • Practical experience with non-fermented milk products processes and application of enzymes. Experience with enzymes assays and related analysis is a plus.
  • Excellent communication and project management skills.
  • Excellent experimental planning and data analysis skills and curious about developments in digitalization.
  • Ability to work independently and as part of a collaborative team as well as manage time and priorities.
  • Commercial acumen and ability to balance technical and commercial needs.
  • Innovative and solution-oriented mindset, yet flexible and comfortable in engaging with customers.
  • Curious and enjoy generating science-based insights and crosslinking biological research with application know-how.
  • Be able to engage and communicate at all levels in the organization.
  • Knowledge around stabilizer and emulsifier is not a requirement, but an advantage.

Travelling to customer sites or other Novonesis sites up to 20% of your time is expected.
