Your main responsibilities will include:
- Using non-thermal green technologies for extracting proteins, peptides, and chitin from yellow mealworms and black soldier fly larvae.
- Validating antioxidant and emulsifying activity of peptides obtained using bioinformatics.
- Producing food ingredients such as functional peptides, chitin, and insoluble proteins from abovementioned insects in lab scale.
- Collaborating with industrial partners for scaling up the obtained ingredients extraction and production to pilot scale.
- Collaborating with our sensory lab on sensory evaluation of the final products generated as part of the project.
