AAK Denmark

Located in the Port of Aarhus, AAK Denmark is the oldest site in AAK founded in 1871 and the world’s largest producer of shea oil and fats. These are mostly used in the chocolate and confectionery industries, but shea oil is also used in cosmetics. Our highly automated production process runs 24/7 – 365 days a year, supervised by expert operators from our central control room. Our oil and fats laboratory is responsible for the development of AAK’s global process technologies, which contribute to cleaner and more efficient manufacturing, and more sustainable end products. Our product development team manages development activity across the group, in close collaboration with the Customer Innovation Center. Our site’s large IT team also works across the globe.

About The Role

In AAK’s Global Confectionery Center of Excellence, located in Aarhus, Denmark, you will combine the production of chocolate and its analysis. You will work closely with dedicated colleagues who share a passion for chocolate. The team of chocolate technicians contributes in various contexts to AAK's vision of being "first choice for value-adding vegetable oil solutions".

You will contribute to the vision by:

  1. Transforming ideas and projects into finished chocolates with unique properties. Here, developers and customer technicians are supported in the design and execution of development-oriented or customer-driven trials. You will be an active sparring partner in our development experiments.
  2. Contributing with a practical approach to teaching AAK's regional colleagues and core customers in chocolate processes and product properties at AAK academies, and through direct collaboration with AAK regions across the globe and selected customers at the Global Confectionery Center of Excellence to showcase the role, benefits and advantages of our ingredients in chocolate and confectionery applications.
  3. Supporting sales and marketing through the production of inspiration and taste samples for exhibitions and seminars.

Your Responsibilities

You will be part of a strong team of six direct colleagues who work closely together with hands-on production of chocolate and confectionery to test, prove, document, and showcase our ingredient solutions to the different AAK regions, partners, and customers. You will work with and use advanced analysis equipment in our mini chocolate factory and implement and employ sensory analysis to quantify the benefits of our ingredients in the confectionery applications. You will be involved in the development of new methods for analysis and creative chocolate applications.

The tone of communication in the team is informal, while at the same time we have a strong sense of responsibility for what we deliver.

When carrying out trials, several standard processes and methods are used to a large extent, including:
  1. Mixing, rolling and conching chocolates, compounds and fillings.
  2. Tempering chocolate and molding pralines and bars.
  3. Carrying out analysis – durability, texture, viscosity, rheology, sensory, melt profiles (DSC), etc.
  4. Analyzing correlations in applications, e.g. textures, how chocolate behaves under specific conditions and which statistical correlations can be derived and how it correlates with sensory analysis.
  5. Operating and maintaining existing chocolate and analysis equipment as well as commissioning new equipment.
  6. Contributing to maintaining a well-functioning, safe and clean chocolate laboratory.

About You

Ideally, you have a higher education such as chemist, food engineer, food scientist, pharmacist, process technologist or similar with a strong proven background working in Analytical in Food Industry, preferably in the confectionery Industry.

A proven record working in Sensory analysis is a strong differentiator.

We attach great importance to your ability to combine theory with your own practical experience to achieve the right understanding of fat chemistry, processes, and the function of the ingredients in chocolate. You should naturally be able to communicate observations, results and knowledge to partners locally and globally.

Attention to detail, responsibility, humor, commitment, initiative and the ability to contribute to good collaboration in the team are valued very highly and you must like to use your hands and enjoy the fact that your work is not stationary.
