The University of Copenhagen seeks a highly motivated and skilled Plant Protein Data Scientist to join our research team in the Department of Food Science.

Job Description:

We are looking for a talented individual to work on a PhD project focused on synergizing chemistry and data science to enhance plant-based food development. The successful candidate will have a strong background in plant proteins, plant-based foods, and data analysis, and be able to bridge together protein variability, interplay between protein functionality and extrusion conditions, and molecular modifications during extrusion using an entirely new data modelling approach.

The project aims to advance the development of sustainable foods rooted in our understanding of the interplay between green chemistry principles, functionality, consumer acceptance, and sustainability science. As a Plant Protein Data Scientist, you will be part of the research group on Food Design and Sustainability (FDS), which covers multiple scientific disciplines ranging from food chemistry to consumer science and food systems modelling.

Key Responsibilities:
  • Conduct independent research under supervision, focusing on developing novel data models for plant protein extrusion and optimization of meat analogue quality
  • Participate in active research environments, including collaborations with industry partners and academic institutions
  • Teach and disseminate knowledge through scientific papers and presentations
  • Write and defend a PhD thesis on the basis of your project

You will be working closely with our international industrial and research network, covering the development of eco-efficient resource management and food processing technologies as well as analytical and sensory measurement methods in food innovation.

The ideal candidate will have a strong interest in plant proteins, plant-based foods, and protein analytics, and be able to communicate complex scientific concepts effectively to both technical and non-technical audiences.

About the Role:

The PhD Programme is a full-time position, lasting up to 3 years. You will be employed as a PhD fellow and be enrolled in the PhD School at the Faculty of SCIENCE, University of Copenhagen. The terms of employment and salary are in accordance with the agreement between the Ministry of Finance and The Danish Confederation of Professional Associations on Academics in the State (AC).

The estimated salary for this position is approximately €**55,000-65,000** per annum, depending on qualifications and experience.
