Opening Summer 2025 – the opportunity to join the pre-opening team of 1 Hotel Copenhagen and bring a transformative brand to Denmark.

1 Hotel Copenhagen is centrally located at the intersection of the city's vibrant Latin Quarter and its historic heart; it will feature 282 rooms including 30 suites. With a Green-Michelin-starred Chef at the helm, the property will also feature locally sourced, seasonal cuisine as eclectic as the city itself at the signature restaurant and bar. Guests and locals alike can find tranquility in the nature-inspired Bamford Wellness Spa, connected with the natural world in the property's urban garden complete with an on-site bee hotel, or embark on an adventure, exploring Copenhagen's rich tapestry of parks and museums on bike.

We are looking for an enthusiastic Restaurant Manager to lead the opening of our new restaurant, launching in Summer 2025 as part of 1 Hotel Copenhagen. You will play a key role in setting up operations, building a strong team, and ensuring everything is in place for a successful launch. Once open, you will lead the team, manage daily operations, and drive performance to meet our goals. Your leadership will inspire the team to deliver outstanding service, uphold our brand values, and keep guests engaged. You will be responsible for managing the budget, tracking financial performance, and ensuring cost-efficiency. We're looking for someone who is passionate, organized, and ready to take on challenges. Responsibilities
  • Oversee the opening of the restaurant for launch in Summer 2025, ensuring all operational details are in place for a successful start.
  • Lead the development and execution of departmental strategies aligned with the property and 1 Hotel brand.
  • Inspire the team to embody the 1 Hotels Vision, Mission, and Compass, delivering exceptional service and upholding brand standards.
  • Manage the departmental budget, track financial performance, and ensure cost efficiency.
  • Lead, mentor, and develop team members through coaching and continuous learning, ensuring alignment with company culture.
  • Optimize restaurant operations by improving guest satisfaction, managing staff, and resolving issues promptly.
  • Collaborate with the culinary team and the rest of the F&B management team to ensure a complete guest experience and a cohesive employee experience.
  • Ensure adherence to safety, sanitation, and company policies, maintaining a high standard of food quality and service.
About you...
  • At least 2 years of experience as a Restaurant Manager or similar in a full-service restaurant.
  • Strong leadership, organizational, and management skills are essential for success in this role.
  • Prior experience with a luxury hotel brand is a valuable asset.
  • Excellent communication, interpersonal, and conflict resolution skills are required. Along with the ability to motivate and manage staff, is key.
  • Flexibility is needed, with the ability to work weekends, holidays, and varied hours.
  • Fluency in English is required for effective communication in this role. Danish understanding is a great asset, but not a must have.
