DTU Food offers a postdoc position to carry out research on i) extraction of high value compounds from insects using sustainable and non-thermal green technologies and ii) evaluating and utilizing these ingredients as functional compounds and nutrients in food products, respectively. Different extraction technologies such as supercritical CO2 and different pre-treatment methodologies (pulsed electrical field, ultrasound and/or enzyme treatment) will be used on the insect biomass. The research carried out by the postdoc will contribute to a GUDP project called PROINSECT. The postdoc will thus get excellent opportunities to collaborate and network with the partnering Danish companies.

The postdoc will be working in the Research Group for Bioactives – Analysis and Application, and the Research Group for Food Production Engineering, at the National Food Institute, Technical University of Denmark (DTU Food). Research in extraction of high value compounds from plant based raw materials and their application in foods is one of the focus areas of these research groups. Responsibilities and qualifications

We are seeking a candidate with a PhD in food science, food technology, or similar.

As part of your research, you will:

  • Use nonthermal green technologies for extracting proteins, peptides, and chitin from yellow mealworms and black soldier fly larva
  • Validate antioxidant and emulsifying activity of peptides obtained using bioinformatics
  • Produce food ingredients such as functional peptides, chitin and insoluble proteins from abovementioned insects in lab scale
  • Collaborate with industrial partners for the scaling up of the obtained ingredients extraction and production to pilot scale
  • Collaborate with our sensory lab on sensory evaluation of the final products generated as part of the project
  • Work closely together with lab technicians who carry out analysis of the raw materials to characterize them
  • Engage in supervision of students and PhD students and may also be involved in some other teaching activities
  • Participate in project meetings with our project partners in Germany and Denmark
  • Take responsibility for planning and executing your experiments

In the assessment of the candidates, consideration will be given to:

  • Research experience with protein and/or chitin extraction and pre-treatment techniques
  • Experience on characterization of biochemical properties of extracted molecules
  • Expertise in food emulsions, emulsifiers and lipid oxidation
  • Experience with analytical techniques to analyze antioxidant activity of proteins/peptides
  • Supervision and teaching experience
  • Skills within statistical analysis
  • Communication skills both in oral and written English
  • Flexibility and self-motivation are desired skills at DTU
  • We expect you to be a team player and interested in collaboration internally and externally
  • Strong motivation in sustainability

As a formal qualification, you must hold a PhD degree (or equivalent).

Salary and terms of employment

The appointment will be based on the collective agreement with the Danish Confederation of Professional Associations. The allowance will be agreed upon with the relevant union.

The period of employment is 3 years. The starting date is 1st of May 2025 (or according to mutual agreement).
